Spain is one of the world's great gastronomic destinations, where every region tells its own culinary story through local ingredients, generations of tradition and an intrinsic spirit of hospitality. From the seafood-rich coastlines of Galicia and the vineyards of Rioja to the rice fields of Valencia and the mountains of Asturias, the country's cuisine is defined by regional diversity, but united by a simple philosophy of pure, exceptional ingredients, prepared with panache. There’s also a deep-rooted spirit of generosity and sharing that remains at the heart of Spanish dining.

Whether it’s grilled seafood and meat, paella or classic tapas, Spanish dining is as much about bringing people together as it is about flavour and provenance. Alongside these timeless dishes, a new generation of chefs is reinterpreting traditional recipes with imagination and finesse, creating food that is both rooted in heritage and unmistakably contemporary.

'Even when guests run out of chit chat, the food and drink stimulates conversation: always about quality' says Liverpool restaurateur Peter Kinsella (Lunya and Lunyalita). It can also be about surprise and the unfamiliar, but it’s always about the reassurance of pure comfort of the senses as the flavours, textures and visual presentation evoke memories of cherished visits to Spain.'

Spanish wine has evolved in much the same way. While Rioja continues to enjoy global acclaim, today's wine lovers are increasingly exploring the freshness of Albariño from Rías Baixas, the elegance of Godello from Valdeorras, the vibrant reds of Bierzo and Priorat, and the versatility of Spain's outstanding sparkling wines and Sherries. Together, they offer some of the world's most food-friendly wines, crafted to complement rather than dominate the plate.

Mountain’s Sommelier Holly Willcocks agrees: 'At Mountain we've seen our guests becoming more and more confident about exploring beyond the well-trodden route to Rioja. We love guiding people to new discoveries like Mencia from Ribeira Sacra or the Listan Blancos of Tenerife. We're often able to offer great value in lesser known areas, which has a huge appeal.'

Bar Rioja, King’s Cross

What: Distinctive, bodega-style wine bar near King’s Cross, devoted entirely to the wines and culture of Spain’s Rioja region. Wooden stools, shelves of bottles and a pincho display create a relaxed, authentic atmosphere inspired by Logroño’s famous Calle Laurel. It’s equally suited to a quick drink or drawn-out gossip.

Pairing: ‘This high-altitude wine' says founder Richard Bigg 'comes from the brilliant Sandra Bravo, a founding member of Rioja'n'Roll group, a loose collective of avant-garde Rioja producers who emerged in the mid-2010s to challenge the region's traditional styles and make some of the best contemporary expressions of Rioja. The wine is made from Viura and is relatively light at 11.5% yet assertive and has real poise. Think melon, camomile, and apple blossom on the nose and a touch of salinity, fennel, grapefruit on the finish. Its zesty notes and hint of acidity complement the anchovies and stand up to the piparra pepper.’

Pairing 2: 'Txakoli wines are better than ever, with more body, fruit and balance' says founder Richard Bigg. 'Wines from a region almost always go well with foods from the same region, and this is a perfect example of that. The weight of this wine, made with the varietals Hondarrabi Zuri and Hondarrabi Beltza, suits the dish, and its acidity cuts through the richness of the crab. Its vibrant freshness and subtle saline minerality cut beautifully through the creamy egg yolk and confit potatoes, while its savoury character echoes the garlic and delicate sweetness of the squid. Pairing: ‘This dish brings together two iconic flavours from Extremadura: traditional 'patatera' (an Iberian pork and paprika sausage) and rich truffle oil. To match it, we’ve chosen Habla de la Tierra 2022 from Bodegas Habla, a modern winery from the exact same region' says owner-manager Alberto Torres. 'It’s a fresh, fruit-forward red with smooth tannins that easily balance the richness of the Iberian pork and egg, while the subtle earthy and herbal notes in the wine bring out the smoky paprika and truffle without overpowering them. It’s a clean, delicious, and easy-to-enjoy pairing.’

What: The original Lobos, tucked beneath the railway arches near Borough Market, has a darker, more atmospheric feel than many tapas restaurants. It combines traditional Spanish small plates with a serious emphasis on meat. Generous portions, friendly service, crepuscular but lively setting all make for a characterful outing. 
Tapas Experience: 'Our pairing will feature a curated tasting experience showcasing three classic Spanish tapas paired with three Spanish wines' says co-owner Ruben Maza. 'Each pairing has been selected to highlight the diversity of Spanish gastronomy and wine culture, offering guests a guided tasting journey through different regions and flavours of Spain.'
Pairing 1: Puchero Croqueta & Fino Sherry from Jerez – the rich, creamy and savoury character of the puchero croqueta is balanced by the Fino's dry, fresh and saline profile. Its refreshing character cleanses the palate and cuts through the croqueta's richness.
Pairing 2: Pulpo a la Gallega & Albariño – a natural pairing from Galicia, combining one of the region's most iconic dishes with its best-known white wine. Albariño's fresh acidity, citrus notes and subtle mineral character complement the tender octopus, while cutting through the olive oil and enhancing the paprika and seafood flavours.
Pairing 3: Crema Catalana & Moscatel – the naturally sweet and aromatic Moscatel complements the creamy custard and caramelised sugar of the Crema Catalana. Its floral and ripe fruit notes enhance the dessert's citrus and vanilla flavours, creating a harmonious and indulgent finish to the tasting.

What: Tomos Parry’s Michelin-starred Soho high-flier takes the wood fire cooking philosophy of Brat and gives it Spanish-influenced, seafood-and-produce-driven direction. A current high-flier in SquareMeal’s Top 100, underscored by knowledgeable, well-drilled service, polished setting and first-rate ingredients sourced from Wales and Cornwall. Theatrical counter seats worth noting.
Dish: Whole Lobster Caldereta, a lobster stew originating in the mountains   
Wine: Raul Perez, Sketch 2022, Rias Baixas
Pairing: ‘Sketch from wine wizard extraordinaire Raul Perez has been on our list since we opened,' says wine supremo Holly Willcocks. 'This is Albariño but not as you know it, with a touch of oak, giving it an almost Burgundian feel, but with the saltiness and ripe citrus flavours we know and love from the grape. I like to pair Sketch with Caldereta, a lobster stew originating in the mountains of Mallorca. The bright acidity is able to cut through the richness of the dish, but with enough weight to hold up to the spicing.'

What: A lively Covent Garden eatery from the Salt Yard Group, combining Spanish and Italian influences with a warm, atmospheric setting over two floors. It works particularly well for pre-theatre dining, dates or groups, with a strong drinks list complementing the food.

What: This long-established Mayfair institution feels more Madrid than Mayfair, and the same can be said for its price tag – no wonder it has a loyal following. Colourful, bodega-style interiors include dark wood, Spanish artwork and a lively, informal atmosphere. A long reputation for some of the best Spanish food in London ever since opening in 1994.

Customers consistently praise the food and intimate atmosphere, making it particularly good for destination diners or loyal locals.

What: A stylish, intimate Spanish restaurant in the heart of Old Amersham, with a warm, buzzing atmosphere and an open kitchen that adds a sense of theatre. The cosy interior, attentive staff and attractive rear garden are further highlights. It feels polished yet welcoming, and has become a genuine local favourite.
Dish: Rabbit Paella 
Wines: Sindicat La Figuera 'vi Sec', Montsant 2022; Oriol Perez de Tudela 'El Padros' 2019 
Red Pairing: ‘This beautiful wine, from the Montsant region (that surrounds Priorat) is a single varietal Garnacha' says Sommelier Alistair Macintyre. 'While it has aged only in concrete, no oak ageing, it has surprisingly mature characteristics. The nose leads with soft red cherries and redcurrant with ethereal herbs. The palate then leans into the bursting red fruit with a smooth texture. While it has a pale appearance, it boasts a generous structure that stands well with the rabbit paella. The richness of the rabbit mousse and offal is beautifully balanced by the wine, whose freshness and acidity cut through the dish and allow its savoury flavours to shine. The herbal flavour matches and helps to build upon the thyme and saffron from the paella.'

It has aged in chestnut barrels for 7 months, allowing for deeper oxidative colour and characteristics to develop. The nose possesses a nutty quality, which also shows citrus, tangy fruit skins. The palate continues to express the nuts, but leans into a more substantial palate of hardy chestnut, yellow apples and tangy orange fruit. It shows great acidity that will help to cut through the rich flavours of the paella. The strengthened body, from the chestnut barrel, will stand up nicely to the rabbit saddle and serrano ham. One of the ultimate white wines of the world, fino works so well with vegetables like artichoke, that you could almost say it is a star pairing. Fino has almost zero residual sugar in it, meaning no clashing with the natural acid in the artichoke, which with some wines creates an unpleasant metallic effect upon pairing. The other elements, such as salty savouriness as well as almond notes in fino, work fantastically with the vegetal earthy notes of artichoke. Choosing a ramped up ‘en Rama’ version of fino, which is unfiltered and fuller in flavour, deals very well with the spicing elements in the aubergine purée, making all round for an excellent pairing.'
