Join Simon on a culinary adventure, where his passion and dedication to the art of cooking take centre stage. Emphasising vegetables, which often take a backseat to meat, Simon was keen to showcase just how flavourful they can be. Together, with a selection of less commonly consumed meats, he has crafted a menu that highlights the potential of locally sourced ingredients, many of which are grown on-site or sourced nearby. To enhance and preserve the natural flavours, Simon utilizes traditional methods such as pickling, fermenting, salting, and bottling, creating a dining experience that celebrates both the versatility and richness of each ingredient.
