A £73 million Guinness Brewery is opening in Covent Garden, with three restaurants led by Pip Lacey and Calum Franklin

Three restaurants led by Pip Lacey and Calum Franklin will launch at the new Guinness Open Gate Brewery in Covent Garden, set to open on the 11 December 2025.

Lacey, formerly of Hicce, will be heading up two of the new openings. Gilroy’s Loft, named after John Gilroy who created some of Guinness’ most iconic ad campaigns, will be a rooftop restaurant serving fish and seafood-focused menus, including line-caught fish and native oysters washed down with pints of Guinness.

The Porter’s Table will serve a sharing menu that spotlights the best of British produce and locally-sourced ingredients. The name for this one pays homage to the porters of Covent Garden who once transported goods through the market.

On the ground floor, there will be a more casual offering in the courtyard space at Old Brewers Yard, where Franklin will turn out his famous pies (he formerly headed up London’s only Pie Room at Holborn Dining Room). The walk-in space will offer outside seating and a bar, while a rotating line-up of music, art and pop-up events are scheduled to take place throughout the year.

The Guinness Open Gate Brewery has been a long time coming. The brand first announced its plans to open a brewery back in 2022, and nearly four years and £73 million later (eek), the team have finally announced an opening date for the second week of December.

The 54,000 square foot building is located on a historic site that first produced beer over 300 years ago, and will house a micro-brewery serving a selection of limited-edition beers.

While no actual Guinness will be brewed on site, there will be plenty of the stuff available to drink. The venue will also offer interactive experiences, beer tastings, and a ‘pour your own pint’ offering.
