The St Enodoc Hotel is set to reopen later this summer, following the first phase of an extensive redevelopment led by restaurateur Paul Ainsworth, and his wife Emma. The duo announced that they had bought the property back in January 2025.
Overlooking the Camel Estuary in Rock, St Enodoc has been welcoming guests since the 1920s and will be relaunched as a year-round destination, with new dining, events, wedding and leisure spaces.
The project marks the most ambitious undertaking to date for The Ainsworth Collection, which includes Michelin-starred Paul Ainsworth at No6, Padstow Townhouse, Caffè Rojano and The Mariners.
The first phase of the redevelopment will introduce two new restaurant concepts alongside a redesigned bar and two versatile event spaces. A second phase will follow, focusing on upgrading the property's 21 guest rooms, alongside the addition of a new gym and wellness centre.
What dining and drinking experiences will be available?
The Estuary Grill will stand as the hotel's flagship restaurant, with a menu built around fresh Cornish produce and Asado-grilled meat and seafood, with daily market price specials and a selection of dishes inspired by Paul's Seychellois heritage. The Flour Garden will offer a more relaxed setting, and will be open seasonally from March to October. This al fresco space will offer Neapolitan-style pizzas and seasonal salads, with a soft serve machine offering nostalgic flavours.

The St Enodoc Bar is also undergoing a transformation, offering local lagers, bespoke cocktails and a world-class wine cellar. Guests will also be able to enjoy drinks from an outdoor bar, served from a vintage truck, with terrace seating that will allow them to take in views across the gardens and Cornish coastline.
What event spaces will be on offer?
Beyond dining, St Enodoc is significantly expanding its event spaces. The new Oyster Salon will accommodate up to 100 guests for weddings, corporate functions and celebrations, while the Porthilly Pavilion will cater for civil ceremonies as well as wellness activities including yoga and pilates, boasting panoramic coastal views and bi-folding glass doors.
