The Premier League club is set to unveil a new bar, sky garden, swimming pool, and restaurant as part of the enhancements to The Riverside development.

Fulham FC signs Michelin-starred Alex Dilling and Oli Marlow to head up new restaurant concept

Fulham Football Club has secured the talents of Oli Marlow, executive chef of Michelin-starred Aulis, and Alex Dilling, of the two-star restaurant Alex Dilling at the Hotel Café Royal. The pair are set to lead match-day dining at The Gourmet, a premium first-floor restaurant with ‘rotating chef stations’ within the new Riverside Stand at Fulham's stadium, Craven Cottage.

The announcement comes as part of Fulham's ambitious redevelopment project, aiming to transform Craven Cottage into a year-round destination. Now, opening in time for the upcoming 2025/26 season, this new addition will follow Adam Byatt’s Brasserie Constance which is set to open this spring in the adjacent Fulham Pier development.

Dilling, known for his mastery of French cuisine and previous roles under Helene Darroze and Alain Ducasse, expressed his excitement about the project: ‘When it comes to food, I’ve always aimed for the top, so joining Fulham, a club that strives for excellence both on and off the pitch, feels like a perfect match.’

Marlow, a Great British Menu 2021 winner, commented: ‘As a lifelong Fulham fan, it’s an absolute honour to become part of this incredible family football club. I’m excited to contribute to enhancing the match-day experience for fans, and I’m committed to achieving just as much success off the pitch as the team delivers on it.’

The Riverside Stand development is a cornerstone of Fulham's broader vision to transform the stadium. Beyond The Gourmet, the project includes more casual dining options like Goila Butter Chicken and Base Face Pizza, along with a private members' club overseen by Philli Armitage-Martin. The stand will also feature a hotel, health club, and the Premier League's only rooftop swimming pool.

As the 2025/26 season approaches, all eyes will be on Craven Cottage to see how this ambitious fusion of football and fine dining unfolds.
