The summer truffle, with its subtle scent and mild taste, is in season from late May to late August. To coincide with the summer truffle season, Dego’ has launched a four-course tasting menu
featuring the delicacy, which will be available throughout July.
The tasting menu costs £78. Dishes include: calf’s liver escalope with tropea red onions and sweetcorn; homemade fettuccine with morel mushrooms; boned rabbit with veal-and-prune stuffing, steamed
snow peas and tomato-gratin summer truffle; and homemade ice cream paired with summer truffle.
Shavings of truffle will also be offered as a garnish to à-la-carte dishes, at £4 per gram.
