Aqua Kyoto is launching a ‘cool’ new terrace this winter in the shape of the Saké & Sushi Ice Bar, which will offer alfresco dining to guests in a stylish space kitted out in with festive
decorations and dazzling hand-carved ice sculptures.
Warm saké cocktails and bowls of Japanese specialities will be the order of the day. To keep guests toasty, outdoor heaters and cashmere blankets will be provided.
Premium sakés on offer include dassai and fushimizu jitate. Cocktails – mixed by head barman Tim Halilaj – will range from the aoki (a mixture of cinnamon syrup, warm apple juice, and Kyoto
Fushimizu Jitate Sake, served with cinnamon and vanilla jelly cubes) to the kiyoshi (maple syrup muddled with fresh cucumber, lemon zest and Sho Chiku Bai Classic sake).
Head chef Jordan Sclare has selected a range of sushi dishes from Aqua Kyoto’s menu that will perfectly complement the sakes. Choose from torched salmon sushi topped with guacamole; sea-bass sushi
with chilli and sesame; stir-fried winter-chestnut udon noodles; or steamed king-crab leg in miso soup.
The Sake & Sushi Ice Bar will run from 30 November to 12 February.
