Ex-Roganic chef Ben Spalding is joining forces with Charlie Lakin, the head chef of plush restaurant-with-rooms The Marquis at
Alkham, to cook two exclusive dinners at the Kent restaurant this June.
Great British Menu star Lakin has devised a superb nine-course tasting menu with the help of hot young talent Spalding to showcase the county’s exceptional produce – as well as the chefs’
thoroughly modern cooking style.
Dishes will include: pheasant egg cooked for 11 hours, with fried seeds, pickled roots and marsh greens; seawater-cured mackerel with broccoli cream, preserved shallots and warm honey; and desserts
such as rhubarb soda with caramelised custard – plus canapés, a welcome cocktail, amuse-bouches and coffee.
The dinners will take place on Wednesday 13 and Thursday 14 June, starting at 7.45pm. Tickets cost £95, including complimentary transfer from Folkestone train station (or from £275 for two
