The cellar bar component of ‘Central (brasserie) & Co’ is an intriguing proposition. Lined up behind a small island granite bar/laboratory counter, there are rows of unlabelled decanters
containing premium spirits shorn of all identifying marks (only the staff know their contents). Customers are presented with a lengthy list notated according to style and key flavours, before being
politely grilled by the head honcho. The aim is to discover each punter’s ideal spirit and create a bespoke quaff, which is subsequently served neat or in classic stirred cocktails sans juice or
fizzy mixer – no hype, no misconceptions, a pure blind tasting. Our couture martini ('delicate and floral with a soft mouth feel’) was the palatable result of a 20-minute consultation. A profile of
the customer's tastes is documented and filed for future reference – repeat custom is virtually guaranteed.
