Gordon Ramsay, Wolfgang Puck, Nobu Matsuhisa – many of the big hitters have a restaurant in Las Vegas. One of our favourites sits atop the Delano hotel and has Alain Ducasse’s name on it. Following on from its London and St Tropez sites, Rivea serves Italian and French small plates and has two beautiful private dining rooms that offer 180° views of the strip. Located in the Cosmopolitan, Rose Rabbit Lie is a surreal supper club. Expect opulent, theatrical dishes such as caviar tacos and plenty of entertainment over dinner – it can hold 1,143 people in total. For something different, check out Neon Boneyard. An outdoor museum filled with famous hotel signs from decades past, its 325sq m North Gallery is a bright, memorable spot for private dinners.

MEET
The biggest opening of 2016 has to be the 20,000-capacity T-Mobile Arena. Set in The Park, a new dining and entertainment district on the strip, this vast venue can host hospitality during concerts and sporting events, as well as conferences. Downtown, the Mob Museum offers guests the chance to go back in time. Located in a former federal courthouse, its Courtroom has been host to many infamous mobsters. It now hosts meetings for up to 200 delegates – mugshots on arrival are a must. Got an early start? Meet at the Sundance Helicopters base in town, before your group takes off on a ride to the Grand Canyon. Besides the awe of the tour itself, breakfast meetings can be held on the canyon floor. Pretty special.

STAY
Away from Vegas’s colossal themed hotels are some high-end, business-first properties. New this year are the MGM Grand’s 117 Stay Well suites, which are designed to enhance a delegate’s experience – think air-purification systems, healthy room-service options and a vitamin C-infused shower. Over at the Aria Resort, the Tower Suites offer in-room, customised tablets that can provide everything a delegate might need to know about their visit. The rooms are luxurious too – the baths look out over the strip.

PLAY
Vegas ain’t Vegas without a show, and Le Rêve – The Dream at Wynn & Encore is among the most impressive. Centred round a pool, the spectacle mixes high-flying acrobatics with daring diving – genuinely breath taking. If you want to place your delegates in the middle of the action, drive out to Boulder City for zip-wiring. The adventurous Flightlinez experience will have guests whizzing down the aerial trails over Bootleg Canyon at 60mph. Be brave – it’s exhilarating.
