Dan Barber, from New York’s acclaimed Blue Hill restaurants, is hosting wastED on the roof of Selfridges from 24 February to 2 April.
Aiming to highlight food waste, the pop-up will celebrate chefs who minimise waste and feature daily specials from luminaries including Alain Ducasse, Jason Atherton and Tom Kerridge.
Menus will be built around ingredients that might normally be discarded – ‘cover-crop sprouts’, anyone? They can be enjoyed in The Greenhouse, a private dining space for up to 16.
