Vault is a restaurant and boutique hotel in Ashbourne, Derbyshire, serving modern British cuisine on a menu that aims to highlight locally-sourced ingredients. The restaurant serves beautifully presented food in a warm, welcoming ambience that encourages diners to relax and enjoy their meal.
To start, some of the dishes on offer are mushrooms on toast with a blackberry reduction, ham hock terrine with English pickled summer vegetables, and smoked pork belly with celeriac remoulade and apple and crackling popcorn.
Vault also has a selection of main course offerings from the grill. There's a beef burger with a charcoal brioche, or if you want something a little different, try the lamb burger with thyme dried tomatoes, a black olive tapenade and feta. The team also serves a ribeye and a fillet steak with smoked ketchup, confit cherry tomatoes, mushrooms and triple-cooked chips.
Also on offer for the main course are the house fish and chips, market fish with nduja-spiced Tuscan risoni, roasted 5-spice duck breast, and a risotto of garden peas with asparagus spears and Parmesan. There is also a range of indulgent side dishes on the menu, including olive oil mashed potato, triple cooked chips with truffle salt, mac and cheese, and pickled onion rings.
The dessert menu is equally indulgent, with eton mess, sticky toffee pudding and lemon tart available, as well as the Vault 'Gold Bar', consisting of white chocolate mousse, caramel, dark chocolate soil and cherries, a special dessert definitely worth a try. The team also serves a cheese board for anyone after something a little more savoury to finish.
Vault also serves a Sunday Lunch, with three courses for £29. Enjoy starters including prawn cocktail and wild mushroom risotto, and choose from beef, chicken and a roast tofu and mushroom Wellington for your the main course, with the usual range of desserts available to finish.
