£1 billion luxury hotel Chancery Rosewood reveals details about its seven restaurants and bars

The £1 billion hotel Chancery Rosewood has revealed exciting details about the seven-strong line-up of restaurants and bars at its soon-to-open Mayfair location.

Earlier this year, the hotel shared details about two high-end food outlets. Tobi Masa, from acclaimed chef Masayoshi Takayama, will be an iteration of his New York sushi restaurant Masa, offering an omakase experience with dishes such as Peking duck tacos, toro tartare, and shiso ink pasta. If it’s anything like his three Michelin-starred venture Masa, prices will be towards the astronomical end, with the NYC spot famously serving menus that start at $750 a head. Ouch. 

Another high-end, high-spend opening at the luxury hotel is Carbone – a New York-born concept that now has locations in Las Vegas, Miami, Hong Kong and Riyadh. It's known for pulling an A-list crowd, with the likes of Taylor Swift, Barrack Obama and Rihanna frequenting the glamorous restaurant. This London branch will see the group bring its signature American-Italian fare to the Mayfair hotel, with fresh pasta, seafood and steaks on the menu.

Newly announced is southern Mediterranean restaurant Serra, a family-style restaurant led by chef Alex Povall (previously Berenjak and Murano) that will focus on fresh seafood dishes, handmade pasta and mezze platters.

Elsewhere, Jacqueline will be a refined tearoom spearheaded by pâtisserie chef Marius Dufay, and will offer a signature Flower collection featuring patisseries inspired by seasonal blooms. Alternatively, for savoury fans, there will also be a more casual delicatessen – GSQ – serving barista coffee, seasonal lunches and fresh pastries.

Finally, the Eagle Bar is set to become the capital’s latest rooftop destination, boasting panoramic views of Grosvenor Square and Hyde Park, a vibrant music programme and an expertly curated cocktail list led by director of bars Liana Oster.

The seventh outlet is yet to be confirmed. It was previously understood that Le Caprice would take over a corner of the site, although there have since been rumours that this will no longer go ahead. While no official statement has been released on what is, or isn’t, taking its place, we’ll keep this page updated as soon as we hear more.

It’s a lot to get your head around, but the hotel has announced it will launch a staggered approach to opening, with the main hotel set to open on 1 September, along with Serra, Jacqueline, GSQ and Eagle Bar. Later in the month, Carbone and Tobi Masa will open their doors.
