Named after the cherry red 1964 Chevrolet Impala Saad drove during his summers in Egypt, this restaurant is clearly a deeply personal project. A huge effort goes into sourcing and preparing ingredients. Devon ducks are dry-aged, stuffed with black lime and Aswan chillies, roasted over embers and served with a sauce pressed from the carcass. Ingredients like honey-preserved green figs, salt-packed greengages, fermented aubergines with walnuts and chilli, and salted citrus accompany grilled meats and grains. The restaurant makes its own fresh cheese from Cumbrian cream, and ferments sardines to make in-house garum.
