99 Sushi Bar & Restaurant is a contemporary Japanese restaurant in Mayfair and the London outpost of a group founded in Madrid in 2005 by brothers Fernando and Pedro de León. The brand has since spread to cities including Barcelona, Marbella, Monaco, Budapest, Dubai, Rabat and Abu Dhabi, where its restaurant has been awarded a Michelin star. Its Rabat site picked up two toques from Gault&Millau in 2026, in the guide’s first Moroccan edition.
The name comes from the founders’ belief that absolute perfection is out of reach, so the kitchen aims for the next best thing - 99%. In practice, that means an exacting approach to sourcing, with Atlantic bluefin tuna as the star ingredient, particularly its prized fatty cuts. The cooking is rooted in Japanese tradition, but European techniques and influences picked up on the de León brothers’ travels run through the menu, so this isn’t the place for a purist sushi set.
For the closest view of the action, the four-seat sushi counter puts diners right in front of the chefs as they prepare each dish. The main dining room seats up to 60, while the Cabaret Bar is a separate, more intimate space with room for 19.
The interiors lean towards late-night glamour rather than Japanese minimalism. Gold accents and mirrored surfaces catch the light, amber-lit textures glow, and deep purple and crimson velvet sets the mood, so the room feels closer to a Mayfair cocktail lounge than a traditional sushi-ya. Outside, landscaped terraces are dotted with sculptural bonsai installations, a modern take on Japanese garden symbolism that brings a touch of nature to an otherwise thoroughly urban address.
