The success of this gorgeous, grown-up restaurant is testament to Brighton’s coming of age as a foodie destination. Set over two floors with a seductive teal-and-mustard colour scheme, Pascere is intimate yet plush, neighbourly yet smart, and “amazing all round”. Owner and former food journalist Amanda Menahem is a warm presence out front, while the kitchen creates “seriously classy” menus with bags of creativity and finesse. They genuinely “love the produce they serve” – witness braised hare accompanied by roasted Jerusalem artichoke, puffed wild rice, cacao and tarragon or a dish of guinea fowl breast with pressed leg and thigh, salt-baked celeriac purée, gremolata and kale or even a thumping plate of braised beef cheek with fresh tagliatelle. Desserts such as dark chocolate financier with sour cherries and white chocolate also hit the heights. Small plates and ‘power lunches’ help things along, while the “really good” wine list requires close scrutiny. And the name? Apparently, it means 'to nourish' in Latin, which sums up what Pascere is all about rather nicely.
