Squaremeal Review of Matt Worswick at the Latymer ?

A luxury hotel and spa on a grand scale, surrounded by 123 acres of Surrey parkland, foliage-clad Pennyhill Park is also home to the flagship Latymer Restaurant – a low-ceilinged and somewhat old-school dining room that provides the backdrop for fine wines and some thrillingly adventurous food. Following Michael Wignall’s move to Gidleigh Park, the kitchen is now in the highly capable hands of Matt Worswick (one of Square Meal’s ‘rising UK stars’), who made his name at Glenapp Castle in Scotland. Diners are treated to a succession of exhilarating dishes, built around a choice of multi-course tasting menus in the modern idiom (available lunch and dinner). Typical offerings from the evening line-up might range from octopus with sesame, miso and coriander to lemon cream with buckwheat and sorrel, by way of highly eclectic offerings such as butter-poached pollack with puffed black rice and taramasalata or confit pork belly with fermented cabbage and BBQ apple sauce. Meals are fleshed out with snacks and mini-courses, while the prestigious Pennyhill Park wine cellar provides suitably classy refreshment.

Matt Worswick

A former protégé of David Everitt-Matthias at Le Champignon Sauvage, Matt Worswick’s early career also involved spells with stellar chefs Kenny Atkinson (when he presided over St Martin's on the Isle) and Simon Hulstone at The Elephant in Torquay – as well as time at the Lords of the Manor in Gloucestershire. Worswick succeeded Michelin-starred Adam Stokes as head chef at the stunningly located Glenapp Castle in January 2013, and is certainly making a name for himself, showing a particular fondness for seafood and foraged pickings on his daily fixed-price menus (three courses at lunch, six at dinner).
