Acclaimed Edinburgh chef Stuart Ralston (Lyla, Noto, Tipo) opens Vinette, a wine bar on Broughton Street that blends Parisian charm with Edinburgh flair. Located on the former site of Fhior, the project marks a new chapter for Ralston’s Aizle Hospitality Group, following the closure of his first restaurant Aizle in 2025.
Upstairs, Vinette is a Parisian-style bar à vin serving seasonal, ingredient-led sharing plates with a European bistro sensibility. The menu, overseen by Head Chef Calum Ralston, includes dishes like braised duck hearts on toast with pickled green peppercorns, grilled Iberico pork chop with cider-braised onions, and pigs head croquettes with smoked paprika.
The wine list, curated by Group Head Sommelier Stuart Skea, focuses on Old World bottles from small-scale producers, with a dynamic by-the-glass selection designed for exploration.
The interiors, by Ross McNally of Scarinish Studios, are minimalist and inviting, with crushed linens, soft lighting and a calm, candlelit atmosphere.
Beneath Vinette lies Vivien, an intimate cocktail bar inspired by Belle Époque poet Renée Vivien. The space channels her decadent, rebellious spirit with ambient lighting, mirrored ceilings and a curated drinks list by Rebekah George. Expect signature cocktails like The Strawberry Thief and Violet Subterfuge, alongside refined bar snacks such as Ortiz anchovies with lemon butter and potato mille-feuille with beurre blanc.
Together, Vinette & Vivien offer a dual experience: a relaxed, wine-led dining room upstairs and a moody, late-night cocktail bar below. It’s a bold and elegant addition to Edinburgh’s dining scene, and a natural evolution for Ralston’s growing group.
