The menu consists of small sharing plates, elevated pub classics and a fantastic Sunday roast - but the dishes are always changing, in accordance with the seasons. First and foremost, it's worth mentioning that the Lion & Pheasant is very transparent about who it’s suppliers are, extremely passionate about supporting the local community, and always note their current suppliers right at the start of their menus.
Starters on the Lion & Pheasant menu have included wild mushroom parfait with shallot marmalade with soy and mirin maitake, herb lavash cracker soubise and pickled mustard seed; venison haunch and black pudding scotch egg served with celeriac remoulade with a mixed green salad; and pan-fried scallops with parsley foam, miso roasted cauliflower with pickled raisin and apple puree.
A focused selection of main courses throws up several impressive options. The lamb pithivier, for example, is paired with pea mousse, olive oil pomme puree, smoked aubergine, kale, a mushroom and celery emulsion and baby onion. Elsewhere, there’s a comforting plate of pan-fried halibut with cockle and dill risotto with sauce vierge, buttered samphire, crispy leek and micro coriander. There are plenty of options for dessert, including a rich cognac cake served with blood orange sorbet, sticky toffee fondant topped with honeycomb, and banana parfait with caramel, brulee banana and peanut brittle.
