But for a taste of what’s on offer, starters might include the likes of bream royale crudo with pickled horseradish snow and trout roe, truffle beef tataki with wakame beef fillet and fresh truffle, or smoked and cured duck breast with roasted walnut and a fig emulsion. Main courses, meanwhile, have included lamb rack with celeriac puree, cider sauce, broccoli, and roast new potatoes; cod fillet with fennel puree, garden peas, broccoli, clams and a Champagne velouté, and a vegan mushroom and chestnut Wellington served with carrots, potato puree, kale, and a veggie jus.
