Quadra is an Italian restaurant and pizzeria in Fulham that’s trying to do things a little bit differently. Rather than churning out the same Neapolitan pizza that is most widely consumed in the UK, diners can sample its signature pizza 'al taglio' offering, which is cooked in square tins and served by the slice. Pizza al taglio tends to be a little thicker and fluffier than conventional Neapolitan pizza and is commonly sold by weight in Italy – probably due to its hefty portion size!
Quadra takes real pride in the ingredients and processes it uses to make its pizzas. Its dough is made from natural unrefined flour, for example, with little else added while the bases are slow-cooked for 12 minutes (precisely!) for the perfect rise.
It’s not just pizza on the menu though, with a range of Italian favourites to whet your appetite before the main event. Kick off with a classic Italian cocktail such as an Aperol Spritz or Negroni, perhaps alongside a couple of antipasti such as burrata with tomato and basil or homemade focaccia and olive oil.
There is also an entire section of the menu dedicated to Fritti (basically deep-fried things) including the likes of truffle and porcini arancini, mozzarelline (deep-fried mozzarella balls) and courgette, ricotta and mint fritters. Examples of pizza toppings include truffle cream, mozzarella, porcini, mushroom and parsley puree, mozzarella, pistachio pesto, stracciatella and pistachio crumble, and smoked provola, potato, pancetta and rosemary. They’re unlikely to be flavours you’ve tried on a pizza before, which is all part of the fun!
