Luke Matthew’s Beef Wellington

One such chef is Luke Matthews, Executive Head Chef at Chewton Glen Hotel & Spa in Hampshire. He uses Donald Russell’s Centre Cut Fillet Steak to create a sublime individual Beef Wellington, served to appreciative diners in Chewton Glen’s restaurant, The Dining Room.


Fillet is the most tender of all the steak cuts, which makes it cut like butter in this classic recipe.  Luke sears it first, with thyme and garlic, before topping with a rich, truffle-enhanced mushroom duxelles. It’s wrapped in Parma ham before being encased in lattice-cut puff pastry and basked to a golden brown. 
Sliced open with a serrated knife – a Chef’s secret for keeping the pastry neat – a perfectly medium-rare, delicate pink fillet steak is revealed. “This is my take on a classic dish using Donald Russell’s fantastic beef, simply prepared but with a real wow factor”, says Luke.
