Two-Michelin-starred Italian chef to breathe new life into the Baglioni

Well known by Italian foodies, Cedroni owns three restaurants in his native Ancona, including the flagship, two-Michelin-starred La Madonnina del Pescatore. His cooking style focuses on fish and seafood, especially modern-Italian interpretations of raw-fish dishes such as sushi. He is also known for avant-garde party pieces such as ‘toothbrush and toothpaste’ – a pre-dinner palate cleanser consisting of edible toothpaste in a tiny tube, a toothbrush, and saké-laced mouthwash.

Cedroni is one of a clutch of big-name Italian chefs to have arrived in London in the past year – other prominent chefs to have headed up restaurants in London include Massimo Riccioli (formerly at Massimo at The Corinthia), Nicola Batavia (Casa Batavia), and Bruno Barbieri (Cotidie).

‘London is the biggest culinary stage in the world and also one of the best,’ explained Cedroni, when he was asked to explain the capital’s attraction to Italian chefs of his pedigree. And for me personally, having been born and raised in a town of 4,000 people, London is a new challenge.’

The menu at Cedroni’s new restaurant will be inspired by that of its Italian counterpart, although the dishes will not be exact copies. ‘With this venture, I aim to bring light, modern flavours to London’s Italian restaurant scene,’ explained the chef. As such, dishes might include fish lasagne with parsley and coconut, or warm carpaccio of sea bass with lime purée and rocket sauce.

The luxurious Baglioni Hotel is already known for its sophisticated Italian cooking, but under the auspices of Cedroni, it hopes to become a destination for Londoners as well as visitors. The layout of the dining room will be slightly altered, although the plush furnishings and rich colours will remain.

Moreno Cedroni’s restaurant at the Baglioni will open on 3 October.
