A Japanese restaurant in Fountainbridge, Maki & Ramen, does what it says on the tin: pretty maki rolls and seriously good ramen. Teddy Lee is the founder behind Maki & Ramen, a chef in his own right who studied in a sushi academy in Tokyo. With the aim of introducing high-quality ramen and sushi into the local community, Teddy created Maki & Ramen. The team encourages all guests to discover a true taste of Japan and let the good times roll - you won’t regret it.
In order to make the broth, the chefs use a recipe that is inspired by those used in Japan, making sure it goes through a rigorous and impressive eight-hour process in order to make it silky and rich. The ramen noodles are always homemade, with just the right texture. As for the sushi, fresh ingredients and unique flavours are used in order to create this delicious, edible art. If you can handle the spice try the hell ramen, with chilli-infused tonkotsu-based broth topped with marinated chashu and half a ramen egg. With a rich, intense flavour, the black garlic tonkotsu is slowly flavoured over time in order to give it a decadent taste. The steak tataki is a creamy, hearty curry based broth that is paired with tataki steak that's cooked rare.
Level up your ramen with some delicious sides, including fried karaage chicken coated in a sweet and spicy teriyaki sauce, the tempura battered prawns, fried octopus dough balls with bonito flakes, veggie gyozas and seaweed salad with tangy and explosive flavours. We love the sound of the fried panko pumpkin croquettes with the signature curry sauce and pearl rice, along with the chicken yakisoba with stir fried noodles, crispy chicken karaage and sweet yakisoba sauce. Sounds pretty delicious to us!
