Cô Thành is a vibrant Vietnamese restaurant in Covent Garden, bringing the bold, herbaceous flavours of Southern Vietnam to Henrietta Street. Founded by Brian Woo, Cô Thành is a heartfelt homage to the late Nguyen Thi Thanh - the legendary ‘Lunch Lady’ of Ho Chi Minh City, whose street-side noodle soups captivated locals and global food lovers alike, including the late Anthony Bourdain.
Woo’s culinary journey began in 2013 with a transformative trip to Vietnam, where he trained under Nguyen's guidance for three years. Her influence lives on in every bowl served at Cô Thành, which first opened in Hong Kong in 2017 and now makes its much-anticipated London debut.
The menu is a celebration of regional Vietnamese cooking, with a focus on the aromatic, spice-laced dishes of the south. Expect signature noodle soups like Bun Thai, a vibrant, tangy broth inspired by Thai flavours, and Bun Mam, a rich, umami-packed soup made with fermented fish and shrimp paste. Other highlights include Bun bo Hue, crusty Banh mì, and a selection of refreshing Vietnamese desserts.
Exclusive London specials will sit alongside favourites from the Hong Kong original, while the drinks list champions natural wines, inventive cocktails, and traditional Vietnamese smoothies, juices, and coffee.
Founder Brian Woo says, ‘London’s food scene is one I’ve long admired. Cô Thành is my way of continuing Nguyen ’s legacy - sharing her recipes, her warmth, and the incredible depth of Vietnamese cuisine with a new audience.’
With its roots in street food and a soul steeped in tradition, Cô Thành promises a transportive dining experience that’s as heartfelt as it is flavourful.
