At the heart of Brutes is the martini. Guests build their drink from a simple martini card, choosing everything from the base spirit to the style and garnish. Options span dry, wet, dirty or 'brutal', finished with generous, often cheeky touches such as blue cheese olives, gildas, pickled onion snacks or chicken scratchings. A martini 'barometer' helps guide indecisive drinkers, while a rotating selection of suggested serves showcases combinations dreamed up by friends, regulars and collaborators. Citrus is pressed to order, herbs are picked by hand and every element is crafted from scratch.
