Founded by chef Tom Geoffrey, Barang reflects his passion for Khmer flavours and live-fire cooking, honed through experiences at Bai Sor in Phnom Penh and Carousel in London. The menu is designed for sharing and bursts with creativity, combining authentic Cambodian techniques with the best of British seasonal produce. Highlights include raw tuna with compressed melon, lemongrass, coconut and lime, diver scallop with tamarind brown butter and pig’s ear crackling, and laab of venison with pork fat and Khmer spices. Larger plates feature whole grilled red mullet in banana leaf with Kep dipping sauce, smoked and roasted half mallard with long pepper curry and duck flatbread, and a show-stopping bone-in sirloin steak with bone marrow and prahok dripping.
