Young Guns Food Week at The Pass

From Monday 21 to Thursday 24 September, Matt Gillan, head chef at The Pass restaurant at South Lodge Hotel in Horsham, is welcoming some of England’s top young chefs into his kitchen. Gillan has specifically selected young, up-and-coming chefs from restaurants outside London to create a six-course tasting menu for one night each.

Diners will have the opportunity to watch all the chefs in action throughout service in the 22-cover restaurant, situated in the heart of the kitchen. On the opening night, Jonray and Peter Sanchez Iglesias of Casamia restaurant in Bristol will be showcasing their inspired and innovative Italian cuisine. Tuesday will see James Graham from Allium in Gloucestershire, which won South West Restaurant of the Year in the 2008 Good Food Guide. Wednesday night welcomes Michael Bremnar of Due South in Brighton, which is committed to serving some of the best organic Sussex produce. Then last but by no means least, the host himself, Matt Gillan, will create some of his dishes on the Thursday night, including ballotine of red mullet, pak choi, cannelloni of razor clams, crushed peas, and slow cooked belly of pork with roasted peaches, white beans and spice sauce.
