This October, Arbutus chef-patron Anthony Demetre will launch a 12-week pop-up in the City’s Tower 42.
Opening on 1 October, AD12 atT42 will be a chance for the Michelin-starred chef to bring his refined bistro dishes to a wider audience; as such, he will serve favourites from Arbutus – from the
restaurant’s signature squid-and-mackerel burger, and crisp pig’s head with potato purée and pickled turnip, to rabbit saddle and shoulder with roast carrots and autumn greens – as well as new
dishes such as slow-poached egg with warm potato velouté and pink-grapefruit relish, and sheep's ricotta gnudi with Muscat grapes, autumn squash and olive ‘crumble’.
The pop-up will be open for lunch and dinner, Mondays to Fridays, until 20 December. Lunchtime diners will be able to choose from an à la carte or set menu, while evening guests will be offered a
three, four or five-course tasting menu.
