Raspberry Rickey

Everyone loves a long, pink drink, and this is just the ticket. Serve with a bowl of fresh red berries on the side for extra fruit factor. 

 

Ingredients

50ml Edinburgh Gin Raspberry Liqueur
25ml lime juice
15ml sugar syrup*
soda water to top

Method

Glass: Highball

Add all ingredients except soda to the shaker

Add ice then shake vigorously for 10-15 seconds

Strain into a highball glass with ice and top with soda

Garnish with a lime wedge.

Making the syrup

*Stir equal parts granulated sugar and boiling water until the sugar has dissolved. Cool before use.
