This tangy and slightly bitter drink takes inspiration from raj-era India and the gin and tonic. The drink’s name references the original sense of the word PoSh, which described the travellers who could afford the shady (and thus more expensive) side of the boat to India – Port out, Starboard home.

Ingredients

100g caster sugar
Juice of 4 limes
600ml apple juice
400ml port
400ml tonic water
Strawberry and apple slices to garnish

Method

In the bottom of the punch bowl, dissolve the sugar in the lime juice

Then add the other ingredients and stir well

Add either cubed ice or a single big chunk to avoid extra dilution

Garnish with slices of strawberry and apple
