The first half of the last decade saw a major uptick in rum sales, and growing cocktail culture certainly had a very large part to play in this.

The Daiquiri is perhaps the quintessential rum cocktail. This recipe goes a bit easy on the lime and but if you have an acid palate you can up the quantity of lime juice particularly with a white rum.  Easy to make at home.

 

Ingredients

2 parts golden rum
1/2 part freshly squeezed lime juice
3/8 part sugar syrup*

Method

Glass: Martini

Add the ingredients into a shaker with lots of ice

Shake hard for 15-20 seconds

Strain into a martini glass

* Making the syrup

You can buy sugar syrup – sometimes called gomme syrup – ready made or make it by boiling equal volumes of sugar and water and leaving to cool.
