The menu is inspired by the foodie hotspots of Japan, referencing the likes of Ginza, Shinjuku and Shibuya in Tokyo. While the techniques, presentation and flavours are experimental and nod to the future, the chefs at Shiro also try to preserve the traditionalism Japanese cooking is so well known for.
Moving onto the menu and why not start with a selection of smaller dishes to share. We like the sound of the hoji cha braised octopus and potato salad with coriander miso, alongside chargrilled beef tataki with black garlic ponzu and pickled wasabi, plus red prawn tataki with tsuma salad.
The whole sushi menu is acclaimed, but one dish in particular that you must try is the signature crystal sushi. Here, Shiro chefs have reimagined sushi to create a new jelly-like form which perfectly balances Japanese flavours. It's a taste of the future, and only available right here.
Platters are also a fabulous way to share with your guests, but when it comes to mains we like the sound of the grilled baby chicken with goma yuzu miso, as well as Australian Wagyu bavette with arima sansho and braised daikon.
