Waterman Bistro is a relaxed modern European restaurant from chef Niall McKenna, located in Belfast's buzzing Cathedral Quarter.
Originally opened in 2022, Waterman Bistro's kitchen team is led by head chef Aaron McNeice, who creates fresh, seasonal menus influenced by European cuisine. While Aaron's influences are wide-ranging, the ingredients he uses are as close to home as possible, sourcing produce from artisan farmers and producers nearby. Both Aaron and Niall have worked together since 2014, and Aaron was one of the company's first ever apprentices. Needless to say, his journey has come full circle.
Alongside the main restaurant, there's a cookery school and events space, both of which you can enquire about with the team. The space itself is chic and sophisticated, with a warehouse feel that features huge, dramatic windows, lofty ceilings and sprawling artworks.
Waterman offers both a la carte and set menus, served daily for lunch and dinner, plus a roast on Sundays. For a taste of what to expect, smaller plates include house focaccia with whipped brown butter, and parmesan arancini with truffle mayonnaise. Pasta plays a starring role here, and you'll always find a selection of freshly made dishes, from venison ragu with house rigatoni, to crab and chilli spaghetti. Further larger plates might include steamed cod, shellfish sauce and shrimp, or salmon with gooseberry, kohlrabi and mustard. To finish, classic-with-a-twist creations include an apple crumble baked Alaska.
Those looking for an incredible deal will love the set menu, which includes two or three courses for a fixed price. While Sundays at Waterman are all about a hearty Sunday roast, although do note this is served as a set format, with the choice of two or three courses.
Finally, the drinks menu features local gins and beers which are also often rotated, as well cocktails of the week.
