Under the culinary direction of head chef Owen Vaughan, a MasterChef: The Professionals finalist, the kitchen delivers a menu that celebrates modern British cuisine with a focus on seasonal, locally sourced ingredients. Dishes such as Highland venison with girolles and a rich jus exemplify the kitchen's commitment to quality and technique. Other dishes on the menu at the time of writing include braised pork belly with apple and ‘nduja hispi cabbage, pan fried halibut with cauliflower, romanesco and crispy potatoes, and Madagascan vanilla panna cotta with blackcurrant compote and macadamia nut crumble.

The gastropub offers a variety of menus to suit different occasions. Lunch is served daily, featuring a selection of light and hearty options. The à la carte dinner menu is available from Wednesday to Saturday evenings, offering a choice of two or three courses at a very reasonable price. On Sundays, a set-price Sunday lunch menu is also on offer, including starters and desserts from the a la carte as well as a range of Sunday roast choices.

Head Chef

Head chef Owen honed his skills in some of North Wales' top kitchens, including Pale Hall Hotel and and as head chef of Penmaenuchaf Hall Hotel, before joining The Fanny Talbot as head chef. You might also recognise him from MasterChef: The Professionals where he was a finalist in 2022. Beyond his passion for food, Owen is an avid footballer and a devoted family man.
