SCHLOSS Roxburghe is a stunning, historic manor on the Scottish borders with rolling grounds, over 20 bedrooms and a gorgeous in-house restaurant which can be enjoyed by those staying over in the hotel, or just dining out for the night. Sunlaws Restaurant is known as one of the best restaurants in the area and, actually, the region's only holder of 3 AA Rosettes.
Helmed by chef Dan Ashmore, Sunlaws Restaurant holds up the bountiful produce of the Scottish borders and reinterprets it as an elegant tasting menu across eleven courses. To start, miso butter is slathered on wagyu fat Parker House brioche, followed by an Orkney scallop served with pork belly and Thai broth. The roasted veal sweetbread comes with wild garlic from The Teviot alongside Wye Valley asparagus, and St Brides duck is served with beetroot, plum and an Estate honey glaze.
There are options to add a selection of fine cheeses, before tucking into an indulgent dessert of rhubarb and custard, finished by a refined twist on a nostalgic classic - honey toast and tea - which takes form as Estate Honey mousse, Earl Gray and sourdough. Of course, dishes and recipes change with the seasons, so this is but a taste of what's to come for your own experience but one thing is for sure, it'll be just as delicious.
Vegan diners are also very much catered for. For example, across the vegan menu you'll find creations like the meat radish ceviche
with toasted almond, Kaffir lime and almond milk dressing, alongside the baby cauliflower with white onion and vanilla and caramelised yeast sauce.
If you'd like to visit Sunlaws Restaurant but for afternoon tea instead, the kitchen also showcases a beautiful take on this quintessential passtime with sweet treats such as Yorkshire forced rhubarb and hazelnut frangipane tart as well as Valrhona jivara and blood orange choux au craquelin, alongside classic sandwiches and scones.
