Part of the new-wave breed of restaurants focusing on health and well-being, unlike the name suggests there’s not a tequila slammer in sight at this self-described ‘educational clean eatery’ in the City. Founders Asad Naqvi and Rahil Malik were big on the party scene and found that eating well kept them going throughout long DJ sets, so they’ve teamed up with nutritionist Alice MacKintosh to create a menu full of traceable ingredients and free from any nasties or GM products. Such virtue extends to their cooking methods; it’s all about steaming, grilling, stewing and water-bath cooking (woe betide anyone who mentions the word ‘fried’) and juices are, of course, organic. Does this mean they’re compromising on flavour? Na-ah. If sweet potato and quinoa falafel served with cauliflower rice tabbouleh salad doesn’t satisfy, spicy chicken pho made with slow-cooked bone broth, sous vide chicken and gluten-free buckwheat noodles is sure to.
