Following successful openings in Jakarta and Paris, the London opening presents the group’s most refined menu to date, focusing on dishes from across the Indonesian archipelago prepared with contemporary techniques and modern presentation.
The kitchen takes a broad, regional approach, using Indonesian flavours as the foundation for clean, balanced plates. The menu includes dishes such as Udang Jeruk Bali, combining prawns with pomelo, lime and chilli; Bebek Sambal Andaliman, featuring duck breast with green chilli and andaliman pepper; and Soto Betawi, a coconut milk broth with ox tongue and tomato. Larger plates include Tongseng Kambing, a Javanese-style lamb curry, and Se’i Sapi, smoked brisket served with sambal luat and basil. A deconstructed kolak pisang, made with caramelised banana, pandan and coconut, provides a contemporary take on a classic dessert.
The London restaurant adapts the concept for a local audience, emphasising precision, seasonal produce and a restrained style of plating. Indonesian flavours remain central, but the overall execution is designed to suit London’s modern dining expectations.
