The chef heads up the Reef Knot Restaurant at The Idle Rocks, a luxury hotel nestled in the idyllic fishing village of St Mawes with panoramic views of the sea. She's building a reputation for serving some of the best seafood cookery in the southwest, championing a sea-to-table, zero-waste approach centred around sustainable fish and seasonal ingredients. Originally hailing from Wales, Carla's career now spans an impressive 18 years, having started in kitchens at the tender age of 14. Most recently, she was the chef director of ANIMA in Braunton, and prior to that, she was the head chef at Seacliff at Sandy Cove in Devon, where she helped the restaurant win a place in the Michelin Guide. Further highlights include competing on MasterChef in 2018, and earning a Certificate of Culinary Excellence from the renowned Pierre Koffman.
Carla joined the Reef Knot Restaurant in 2024, following former head chef Dorian Janmaat’s departure. Here, she works with dedicated fisherman Gareth Austin - who delivers fresh seafood to the restaurant daily – to create ultra seasonal menus that highlight the best Cornish produce from land and sea.
