From the team behind Michelin-starred Timberyard and Montrose comes Haze - a stylish all-day venue in Leith, drawing inspiration from great European cafes and wine bars. Located within the historic George Brown & Sons steelworks, Haze is part of Brown’s of Leith – a collaborative hub for food, drink and the arts – and serves as a dynamic neighbourhood spot that transitions seamlessly from morning coffee to evening wine.
Open Thursday to Sunday, Haze is designed for conviviality and comfort, drawing inspiration from food-forward wine bars around Europe. The day begins with expertly brewed coffee from a Slayer V3 espresso machine, while the food offering, overseen by Executive Chef Bart Stratfold, centres around small plates – think cheese, charcuterie and tinned fish – all curated to pair with a thoughtful drinks list.
The wine programme, led by Joseph Radford, follows the low-intervention ethos of Timberyard and Montrose, favouring organic fruit, wild yeast fermentation and minimal sulphur. The result is a selection that’s both refined and approachable, reflecting the Radfords’ commitment to craft, provenance and community.
Inside, Haze embraces its industrial heritage with lofty ceilings, expansive windows and a central bar that anchors the space. Seating is arranged to encourage movement and conversation, making it a welcoming destination at any hour.
Haze sits alongside a trio of other local businesses at Brown’s of Leith: Shuck Bar by ShrimpWreck, NYC-style pizzeria Civerino’s, and whisky blending studio Woven. The wider space continues to evolve, with plans for a bakery, artist studios and a programme of exhibitions and residencies. Haze expands its offering in tandem, with a gelateria and collaborative events on the horizon.
