The "Taste of Skye" three-course set menu offers a variety of options, with dishes focused specifically around the incredible produce found on the Isle of Skye. Begin your meal with starters like juniper-cured turbot paired with oscietra caviar and calamansi, a hand-dived Skye scallop with smoked seaweed butter sauce, or a flavorful beef tartare with charcoal, hash brown, and Tain cheddar. For the main course, indulge in dishes such as Highland Wagyu with pickled and roasted carrots and truffle jus, perfectly cooked halibut with preserved wild mushrooms, mussels, cauliflower, and dill, or fresh cod with pickled fennel, pistachio, and cashew. To finish, treat yourself to a dessert such as dark chocolate crèmeux with sea buckthorn, a delightful pairing of white chocolate and meadowsweet with preserved blueberry, or a savory option of organic Clava brie with apple, celery, and truffled honey.

While the sample menu leaves plenty to the imagination, rest assured you won’t have to wait long to discover the full array of flavors. Expect tantalizing dishes such as creel-caught lobster mousse with nasturtium and hogget with pickled carrot and chanterelle. The penultimate course is described simply as “falasgair,” a Gaelic term meaning the burning of heather and grass—an experience as intriguing as it is memorable.

Best Fine Dining Restaurant on the Isle of Skye
 
From start to finish, our experience at the 3 AA Rosette Edinbane Lodge was faultless It has a lovely atmosphere, very friendy but also very professional. The staff were friendly without being in yuor face, provided some very informative details about the dishes on offer and obviously all knew their stuff.
The near 500 year old Lodge serves a tasting menu for £85 based on local ingredients including some of the freshest seafood we have ever tasted. We thought the wine pairings at an additional £50 were excellent value and really added to the experience.
I liked that they detail on the menu how far away all of the ingredients are sourced from. Langoustines, scallops, local beef and lamb are all sourced within a few miles of the restaurant while fresh herbs, wild greens are plucked from their own garden grounds. Seaweeds, Samphire and even local Skye Sea Salt from the shoreline along from Edinbane featured in our dishes.
 
Tasting menus are my favourite form of fine dining and Edinbane in no way discappointed in terms of variety. Lots of amazing flavours, textures and types of food packed into a range of small dishes. 
I felt that the wine pairings added another dimension to our meal. It allowed us to sample different wines I wouldn't normally consider and and I enjoyed learning about why they were chosen.
 
Despite the dreaded pandemic, the staff did a fantastic job of making the restaurant feel cosy and welcoming but still very safe. Tables were well spaced and all staff wearing masks. It was a restaurant experience I will remember for a long time and if ever we are back on Skye, it will be top of the list.
