Duda Diner is a Malaysian pop-up from husband-and-wife team Hakeem and Zura Ahmad, serving lively, family-style sharing plates at The Pilgrm, a boutique hotel in Paddington. Running from September until the end of December 2026, the residency is the fourth and final takeover in the hotel’s Incubator Kitchen Series, following the pair’s eight-month stint at Goodcup in Nunhead.
The cooking draws heavily on the Ahmads’ personal relationship with Malaysian food. Family recipes sit alongside memories of roadside stalls, bustling market breakfasts, late-night suppers and wedding feasts, all reframed through the couple’s experience of building a life in London. The result is a menu that feels rooted in tradition without being overly reverential to it.
Designed for sharing, dishes change with the seasons and regularly weave Malaysian ingredients into contemporary combinations. A whole grilled seabream is given the ikan bakar treatment, accompanied by laksa beurre blanc, XO chilli and pickled tuhau, a wild ginger associated with Sabah. Kerabu salads are also reworked, with one iteration combining bitter leaves, ginger-lime dressing and candied nuts, while Malaysian-style stir-fries rotate through the selection.
There are a few signatures worth looking out for, too. The tempoyak oyster makes use of fermented durian, one of Malaysia’s more distinctive flavours, while the Duda Burger heads firmly into comfort-food territory. Two smashed beef patties are layered with cheese and a fried egg, then finished with a punchy Sarawak peppercorn chilli sauce.
Duda Diner’s approach is playful and personal, balancing familiar Malaysian flavours with ideas picked up in London. Come with a group and order widely: this is food conceived with the whole table in mind.
