About

The Swan Inn is a 17th century pub and award-winning restaurant located in the pretty Cotswold village of Islip, just outside of Oxford. Refurbished and sympathetically restored in 2022, this warm and inviting pub is open for drinks and small plates in the lounge, or more formal dining in their award winning Cygnet restaurant.

The Cygnet restaurant is headed up by chef patron Paul Welburn. Paul was previously the head chef of Michelin-starred The Oxford Kitchen, and brings with him a wealth of experience and expertise, having trained under Gary Rhodes at the beginning of his career. 

The restaurant is open for both lunch and dinner, serving a seasonally changing menu of two and three courses for lunch and a four course menu for dinner. The menu is regularly changed to reflect the seasons, but an example of the dishes you might find on the menu include maple glazed butternut squash, fresh Cornish monkfish, and heritage breed sirloin beef served with black garlic and kale. Vegetarian options are also available with dishes such as wild mushroom 'hash brown cake' and cauliflower steak served with green sauce.

The bar menu sounds equally as tempting, serving small plates of Paul's popular dishes. Here you will find options such as crispy potatoes 'caesar salad' and mushroom risotto served with Parmesan and bearnaise. Unlike the main restaurant where booking is essential, the lounge does not take bookings, so you can just walk in.

You will also find a good drinks menu which includes a selection of quality wines, local beers and accompanying cocktails. If you have any questions or specific requests the friendly team at The Swan are on hand and happy to help.

Can I come for a drink?

There is a lovely lounge area called the ‘Majlis’ where diners are very welcome to come and enjoy a drink without a reservation. Please refrain from wearing muddy shoes/wellies or muddy/work soiled clothing.

Paul Welburn

Chef patron

Chef patron Paul Welburn has trained and worked with some of the best chefs in the UK - he worked with Gary Rhodes for many years, before embarking on his own career, cooking gently nostalgic British dishes with modern twists with influences from abroad. Paul was awarded a Michelin star for his cooking at The Oxford Kitchen in 2018, an award that made him one of the most . Paul is now focused on launching and evolving The Swan Inn to showcase his passion for seasonal and flavour driven dishes once again.

Giuliano Paolini

Restaurant Manager

Restaurant manager Giuliano looks after the front-of-house experience at The Swan Inn. He has over a decade of experience in fine dining hospitality, having previously managed private dining at two Michelin-starred Le Manoir aux Quat'Saisons, working with legendary chef patron Raymond Blanc.

Originally from Melbourne, Giuliano now lives in Oxfordshire with his partner.

Peter Wilton

Sous Chef

Peter Wilton is the sous chef at Cygnet at The Swan Inn, where he works alongside chef patron Paul Welburn to create its modern British menus. Both chefs have worked together for many years, with Peter's first chef job being alongside Paul at Rhodes W1. He spent four years there, followed by two years at Dinner by Heston Blumenthal. More recently, Peter and Paul worked together at The Oxford Kitchen.

Karen Cross

Restaurant Administrator

Karen Cross is restaurant administrator at Cygnet at the Swan Inn, where she helps steer the ship and ensures everything runs smoothly. Karen attained a hospitality degree in France, before moving to the UK in 2013 to work at Raymond Blanc's Belmond Le Manoir aux Quat'Saisons. Here, she won the the UK Gold Service Scholarship to become a Gold Scholar, while working as restaurant manager.
