Coreus by Clare Smyth is the third of the Northern Irish chef’s restaurants in London, taking pride of place at the Waldorf Astoria London Admiralty Arch on The Mall.
Waldorf Astoria London Admiralty Arch promises to be one of 2026’s biggest openings, turning the historic Admiralty Arch on Trafalgar Square into a huge luxury hotel, with views of Buckingham Palace down The Mall. Clare Smyth joins Daniel Boulud as patrons of the signature restaurants at the hotel, due to open in 2026.
Smyth needs little introduction to most food-minded people across the world. The County Antrim born chef became the first female chef in the United Kingdom to run a three Michelin-starred restaurant, during her time as head chef of Restaurant Gordon Ramsay. In 2016, Smyth left to open her debut solo restaurant Core, which has scooped numerous awards since, including three Michelin stars in 2021.
Coreus by Clare Smyth isn’t a carbon copy of Core, rather, it leans towards seafood, celebrating the diversity and quality of British seafood. Smyth’s menus showcase lesser known varieties and species, but still display her peerless technique and precise, classic style. In her own words, Coreus will be a ‘fine dining celebration of the United Kingdom’s bountiful seas, coastal regions and farms’.
‘Coreus will be the epitome of a modern fine dining restaurant; relaxed, informal luxury,’ she continues. ‘The name Coreus combines Core, meaning ‘heart’ in many languages, whilst Us, symbolises unity and connection. It reflects the passion and heart of everything we do, along with the collaboration between the team, guests and producers.’
Alongside the restaurant, Smyth will also be launching a new bar called’ Potato & Roe’, riffing off the Whiskey & Seaweed bar at Core, offering a huge selection of whiskies, cocktails and wines.
