Cato is a bold cocktail bar in Covent Garden inspired by the pioneering spirit of Alexander Cato – the world’s first celebrity bartender – and the energy of New York City. Created by hospitality group Bart & Taylor, in partnership with award-winning bartender and author Angelos Bafas, Cato promises a drinking experience that blends history, innovation and sustainability.
Bafas, globally recognised for his ingredient-led, minimalist approach, brings serious pedigree to the project, having helmed acclaimed bars including Soma, Nipperkin and Kioku by Endo. At Cato, he revives the iconic Julep, once made famous by Alexander Cato, crowning frosted cups with mint and herbs grown in-house. The ambition? To become London’s first self-sufficient bar for herbs and fruits, sourcing the rest from urban allotments and family-run farms.
The venue unfolds across three distinct spaces. The House of Julep on the ground floor offers a lively, approachable setting for flavour-packed cocktails. Downstairs, Lower Cato is moodier and intimate, serving a tightly curated list of 12–14 cocktails crafted exclusively with British spirits and produce, inspired by the cultural melting pot of New York’s neighbourhoods. Finally, Cato’s Study acts as a creative hub, hosting masterclasses, pop-ups and experimental serves around a communal table.
Food plays a supporting role with elevated American classics: expect fried oysters – a nod to the original Cato’s Tavern – alongside indulgent burgers and toasties designed for pairing with the bar’s inventive drinks.
With its blend of heritage, sustainability and cutting-edge mixology, Cato is set to become one of London’s most exciting new destinations for cocktail lovers.
