The restaurant prides itself on sourcing rare breed slow matured beef, with expertly prepared cuts delivered directly to the kitchen, while fish comes from local Brighton suppliers, to ensure freshness. Nibbles include olives, mini salami and ox doughnuts with horseradish, followed by starters such as bone marrow on sourdough, stone bass ceviche or aubergine with sesame and chimichurri. Mains include dishes like duck with carrot and lavender, pork belly with artichoke, or lamb with beans, wild garlic and anchovy.
Steaks are the main event, with cuts including bavette, sirloin, fillet, ribeye and porterhouse, served with roast shallot and marrow bone.
