The redeveloped Leake Street tunnels just outside Waterloo station harbour a wealth of intriguing gastronomic possibilities and one of them is this new Vietnamese outfit. Banh Bao Brothers is split across two floors in one of eight former railway arches to be repurposed as bars and restaurants, giving it room for around 80 diners. The signature dish here is banh bao (surprise, surprise): a sort of breakfast bun filled with mince pork, Chinese sausage and a quail’s egg. The dinner menu doesn’t stop there, though, also encompassing the likes of pork noodles in a warm broth, spicy beef noodle soup and a papaya prawn salad. If you can’t make your mind up, opt for the seven-course tasting menu (a vegetarian version is also available), while choosing your liquid accompaniment from a selection of beers, wines and cocktails that includes Saigon Special lager.
