In Edinburgh's Marchmont, Argile is an independent chefs table that opened back in the summer of 2022. Offering guests an intimate dining experience, the menu at Argile is fast changing with the seasons, to showcase the very best of what the Scottish lands and seas have to offer, all inspired with a French flair. Jack, Scott and Thomas are a small team who have gained a wealth of experience across some of France and Scotland's foremost restaurants, and bring together this knowledge to ensure that your time at Argile is memorable.
Argile serves only one menu each service. While dishes are subject to change in accordance with the seasons, dishes have included starters like burrata croustade with grilled quince and fennel pollen, and Orkney scallop tartare with gordal olive juice, fig leaf oil and a paste of fig. There may also be pittenweem crab with kumquat butter, sauce of roasted shells and sansho pepper, slow cooked egg in 96 hour onion broth with togarashi and trout roe, and crown prince pumpkin roasted on kelp and walnut shells, with a maple kombucha glaze and walnut sabayon. Polishing off an exceptional meal, the dessert is always equally as special, like the wood roasted cherry and black sesame bakewell with valrhona 100% cocoa and creme fraiche namelaka.
There’s also an option to pair the menu with a wine flight, that way you can bring out the best flavours in both food and wine and get to try several tipples from the exceptional menu. It’s an impressively extensive offering, showcasing the best bottles from renowned French growing regions like Languedoc, Provence, and Alsace along with others from Austria and Central Europe, Spain, Lebanon, and even Japan.
