Squaremeal Review of The Pompadour by Galvin ?

“The most beautiful dining room in Edinburgh” chimes one reader – and he’s not wrong. Located in the city’s legendary Caledonian Hotel, the ever-fabulous Pompadour has been given a new lease of life by Chris and Jeff Galvin – the  dynamic duo behind London big-hitters such as Galvin Bistrot de Luxe and Galvin at Windows. What’s more, this “stunning” vision of belle époque affluence (hand-painted Chinese panels, florid cornicing, pink chandeliers) resonates perfectly with the “divine” food on offer. Seriously impressive French technique meets Scottish ingredients in the kitchen – think cannelloni of North Berwick crab with lemongrass and sweetcorn velouté (a twist on a Galvin classic), confit neck and roast rack of Highland lamb with pipérade, pommes Anna and sauce niçoise or roast fillet of Peterhead cod with braised Puy lentils, watercress and beurre rouge. After that, pineapple soufflé or tarte Tatin with Calvados crème fraîche should fit the bill. With slick, formal service and a full-strength pedigree wine list, we’d wager that eating out in Auld Reekie doesn’t get any swankier than this.

Chris and Jeff Galvin

Brothers Chris and Jeff Galvin opened their first restaurant, Galvin Bistrot de Luxe, to great acclaim in 2005, and followed it with London big hitters including Galvin at Windows and Galvin La Chapelle – plus Brasserie de Luxe and The Pompadour, both in Edinburgh. Between them, the Galvins have worked for everybody who’s anybody: Chris for Messrs Corbin and King, Terence Conran and Paul Gayler; Jeff for Marco Pierre White, Nico Ladenis and David Levin.
