Enjoy a taste of true French cuisine with a visit to Maison Bleue, a special, French-modern fine dining restaurant set in the Suffolk market town of Bury St Edmunds. This wonderful restaurant is led by Brittany born chef-patron Pascal Canevet, and his wife, Karine. The menus are fixed, with all including amuse bouche, starter, main course, dessert and petits fours. Lunch is available from Tuesday through to Friday, and dinner on the same days, a gourmet lunch and dinner menu is served through to Saturday, with a special Saturday lunch in addition, and a gourmet Saturday dinner, too.
To get a flavour of what you can expect, picture a king oyster mushroom and Jerusalem artichoke tartlet, with coffee, tarragon mayonnaise and mushroom jus, or a soft poached egg in red wine, shallot and pancetta sauce, with brioche, fourme d'ambert cheese, pear and pecan nuts. Main dishes include a fillet of Hampshire chalk stream trout, with pak choi and parsley sauce, wasabi and potato purée and pickled red onion, roasted breast and slow cooked leg of pheasant with red cabbage and honey sauce, Le Puy lentils and poached leek. There's always a veggie dish, like the savoy cabbage choux stuffed with tandoori flavoured winter vegetables, kohlrabi confit and vegetable sauce.
Last but not least, there are some splendid choices for dessert. Enjoy a green apple mousse with cocoa butter, salted caramel and hazelnuts, or iced nougat with candied ginger, orange and nougatine, served with blood orange sorbet. Some modern twists on classics include the Yorkshire rhubarb mousse and gel with matcha tea genoise biscuit, rhubarb crisp and rhubarb sorbet, and the vanilla creme brulee with blackcurrant compote, chestnut, chantilly and meringue.
